1 skinless, boneless chicken breast half - cut into cubes

2 tablespoons roasted peanut oil

Ingredients
1 small potato, peeled, and cut in to small pices
1 carrot , cleaned washed and cut into small pieces
½ small onion, finely sliced
handful of finely sliced Cabbage (Gowa)
½ tomato sliced
1 table spoon of olive oil (or any oil -Coconut, sunflower, vegetable)
2 cups of stock (either vegetable or chicken)
1 table spoon of mysore dhal (Parippu)
pinch of salt and pepper
5 pepper cones (gammiris)
DIRECTIONS:
Sri Lankan Eggplant casserole
2 eggplants cut into 1/4" slices
1/4 tsp turmeric
1/4 tsp salt

Keep the eggplants marinated in turmeric and salt. After about 15 minutes fry the eggplants until it is golden in colour and leave it in a paper towel to absorb the oil.
The eggplants can be deep fried or pan fried.
