Dried prawns with Kangkung fried curry

Ingredients : 

Dried prawns 2 tbsp ( savory mix soya meat if you want to go vegetarian)
Kangkung 250g
Onion big 1
Cloves garlic 2
Dried red chille small pieces (not powder) 1-2 tsps
Green chillis 2 cut in pieces or use Chinese chille paste
Oil 2tbsp
Soya sauce 1 tbsp
Egg beaten with little salt and pepper (optional)
Small tomato chopped 1
Salt to taste

Method :  

Prawns with fried coconut curry


Ingredients :  

Snapper fillet
1/2 teaspoon black mustard seeds
12 large shelled green prawns
1/4 cup shredded coconut
1 small butternut pumpkin, cut into 3cm cubes
2 cups water
1/2 cup coconut cream
1/2 teaspoon salt
1 cup shopped tomato (1 can chopped romas will be fine)

Mixed spice
2 tablespoons oil
2 green chilies, split in half & seeded (can be substituted with 1 1/2 tspn dried chillies)
1 cinnamon stick
1/4 teaspoon fenugreek seeds
1/4 teaspoon brown mustard seeds
12 curry leaves (I used bay leaves in absence of)
1 brown onion, sliced
2 garlic cloves, chopped

Mixed spice
1/2 teaspoon turmeric
1/4 teaspoon sweet paprika
1 1/4 teaspoons salt
1/2 teaspoon chili powder
1/2 teaspoon ground coriander
1/4 teaspoon cumin
8 black peppercorns

Method : 

1 Lightly brown coconut & black mustard seeds in a pan on medium heat – about 30 seconds – taking care not to burn them.

2 Grind into a past using mortar & pestle.

3 In a large pot make Spice A by heating oil & adding all ingredients. Fry until onion is starting to colour slightly – about 4 minutes

4 Add tomato & pumpkin.

5 In a separate bowl combine all ingredients for Spice B.

Ceylon red prawns curry

 Ingredients : 

1 medium onion, finely chopped
1 teaspoon fresh ginger, finely grated
3 -4 curry leaves
750 g small raw prawns
3 garlic cloves, finely chopped
1 small cinnamon stick
1/4 teaspoon fenugreek seeds
1 stalk lemongrass, bruised (or 2 strips of lemon rind)
1/2 teaspoon ground turmeric
1 1/2 teaspoons chili powder
2 teaspoons paprika
1 teaspoon salt
2 cups coconut milk
good squeeze lemon juice

Method : 

1.Wash prawns and remove heads but leave shells on ( prawns are cooked with the shell on for better
   flavour).

2. Put all ingredients, except lemon juice, into a saucepan and bring slowly to simmering point.

3. Simmer uncovered for 20 minutes or until onions are soft

Pineapple with Chicken Curry


Ingredients : 

01 tsp chopped ginger
25 gm ghee or butter
500 gm chicken cut as for curry
150 gm semi riped pineapple cubed
70 gm sliced onion
01 tsp lime juice
01 tsp chopped garlic
02 tbsp unroasted curry powder
150 ml coconut water
01 tsp chillie powder
100 ml natural or plain yogurt
75 ml thick coconut milk
01 tbsp fresh coriander leaves chopped
     salt to taste

Method :  

1. Marinate the chicken with curry powder/chillie powder/lime juice/yougurt and set a side for     about 30 minutes.

2. Heat the fat in a saucepan to medium heat, add the onion fry until onions are light     brown.Mix in ginger and garlic cook for 1 to 2 minutes.

Sri Lankan Fish roe with Polos Badum













 
Ingredients :

200 g fish roe
1 sliced onion
1 chopped garlic
1 tsp chili falkes
1/2 tsp tumaric
150 g of boiled baby jack fruit ( polos)
chopped tomato
chopped spring onion
salt and pepper
1 tsp oil

Method :

Sri Lankan Style Eggplant curry with cashew nuts

Ingredients:

1 eggplant
4 cloves garlic peeled and sliced
21/2 teaspoons salt
1 green chilli
1/4 teaspoon turmeric powder
1 sprig curry leaves
2 cups oil
1/2 teaspoon mustard seeds
30g cashew nuts
1/4 teaspoon fenugreek seeds
1 large onion sliced fine
1/4 teaspoon chilli powder
1/3 cup milk

Directions:

Sri Lankan Tamarind Fish Curry











Ingredients:

500g fish steaks (such as mackerel)
1 tsp salt
½ onion, sliced
1 ½ tsp soya oil
½ cup coconut milk
2 tsp chilli powder
1 green chilli
½ cup water
1 walnut-sized piece of tamarind dissolved in ¼ cup of water
½ tsp black mustard seeds
1 sprig of curry leaves
1 ½ tsp fenugreek seeds

Directions:

Sinhala Tuna Curry













 Ingredients:

1 tin Tuna (drained)
1 small Onion
1 small Tomato
1 small Green Chili
3 tablespoons of Vegetable Oil
1 tbs. Chili Powder (adjust to taste)
½ tsp. Salt (adjust to taste)
1 tsp. Sugar
1 tbs. Lemon juice

DIRECTIONS:

Lamb Stew with Green Beans Curry

Ingredients
3 tablespoons olive oil
1 large onion, chopped
1 stalk celery, chopped
3 pounds boneless lamb shoulder, cut into 2 inch pieces
1 (8 ounce) can tomato sauce
3 cups hot water
2 pounds fresh green beans, trimmed
1 tablespoon chopped fresh parsley
1/2 teaspoon dried mint
1/2 teaspoon dried dill weed
1 pinch ground cinnamon
1 pinch white sugar
salt and pepper to taste

DIRECTIONS:

Sausage with Potatoes and Green Beans Curry

Ingredients :
3/4 pound fresh green beans, trimmed and halved
1/2 pound red potatoes, quartered
1 large onion, sliced
1 pound smoked sausage, cut into 1 inch pieces
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon chilli powder (optional)
1 teaspoon vegetable oil
1 teaspoon butter
1/3 cup water

Beef Curry

 

Ingredients

3 lb Stewing beef (cut into pieces)
3-4 tbs. Vinegar
6 cloves Garlic & 1 inch Ginger root - crushed together
2 tsps Salt
1 tbs. Powdered black pepper
1 tbs. Roasted Curry powder (see recipe for home made roasted curry powder )
1/2 tbs. dry red Chili powder
4 Cardamoms
2 Cloves
8 Curry leaves
4 pieces Rampe
1 inch piece Cinnamon
1 medium Onion (sliced)
3 tbs Vegetable oil
2 tbs Tomato paste or sauce
1 cup thick Coconut milk or fresh milk

DIRECTIONS:

Amba Maluwa



Ingredients:

1 medium ripped mango
2 teaspoons minced garlic
2 teaspoons minced ginger
1 onion (sliced)
salt – to taste
1 teaspoon chilli powder
½ teaspoon turmeric
2 teaspoons Sri Lankan roasted curry powder
6 curry leaves
1 x 2.5cm cinnamon stick
2 cups coconut milk
3 tablespoons vegetable oil
4 tablespoons sugar

Annasi Maluwa / Ambula (Pineapple Curry)

















This a famous Sri Lankan dish in every part of the country. Most of the time we have Pineapple curry in our lunch, because most of our parents don´t let us to eat pineapple in dinner time. I think it´s because of the acid that pineapple has..... DON`T KNOW REALLY :-(.
But any way Annasi maluwa is a very tasty dish. try it by your self, then you can decide.


INGREDIENTS: 
1 medium ripped pineapple OR canned pineapple – cut into pieces
2 garlic cloves - chopped
1 small onion - sliced
1 teaspoon chilli powder
¼ teaspoon turmeric
½ teaspoon Sri Lankan raw curry powder
½ teaspoon Sri Lankan roasted curry powder
6 curry leaves
1 x 2.5cm cinnamon stick
1 cup thick coconut milk
2 - 3 tablespoons vegetable oil
1 - 1½ tablespoons sugar
Salt – to taste

DIRECTIONS: 

Kaju Maluwa (Cashew Nut Curry)


This is a very famous dish in Sri Lanka, specially in occasions like weddings & arms-giving ceremonies.
I love cashew nut curry very much and have been tried it for so many times.


INGREDIENTS:
200g cashew nuts
1 medium onion – sliced
3 – 4 tablespoons garlic – finely chopped
2 tablespoons ginger – finely chopped
3 tablespoons black pepper powder
2 – 3 tablespoons Sri Lankan roasted curry powder
½ teaspoon turmeric
2 cups coconut milk
4 – 5 tablespoons oil
5 – 6 curry leaves
Salt to taste

Wattakka Curry - Sweet Pumpkin


Ingredients
 500 g Pumpkin
 1 TeaspoonSalt
 1/4 TeaspoonSaffron powder
 1/2Big red onion chopped
 2Green chillies sliced
 2Garlic bulbs chopped
 1 TeaspoonGround pepper
 1 CupWater
 1Spring curry leaves
 2 TablespoonCurry powder (slightly roasted)
 1 TablespoonChillie powder (slightly roasted)
 1 TeaspoonGround mustard
 1 CupThick coconut milk
 2 DessertspoonScraped coconut (desiccated coconut) (Slightly roasted and ground)
 1 DessertspoonRaw rice (slightly roasted and ground)

DHAL WITH TEMPERED SPINACH


Ingredients
1 cup Toor Dhal (lentils)
1/2 tspn turmeric powder
1 tspn curry powder
Water to boil
Salt to taste

Sri Lankan Style lamb curry


Ingredients       
2 kg lamb (forequarter chops)
4 teaspoons raw chilli powder
2 teaspoons salt
3 tablespoons dark soy sauce
10 cloves garlic chopped fine
3 tablespoons soy oil
1 teaspoon black mustard seeds
1 teaspoon fenugreek seeds
1 teaspoon cardamom seeds (bruised)
1 cm piece cinnamon stick
1 cm piece rampe (screwpine available in Asian shops) (optional)
1 tablespoon coriander powder
1 tablespoon cumin powder
1 ½ onions chopped fine
½ cup coconut milk

Method :

Butter Chicken

 
Ingredients

 500g      Chicken breast fillets cut bite size pieces
 1      Tablespoon      Finely chopped ginger
 2      Teaspoon      Ground coriander
 2      Teaspoon      Ground cumin
 1/4      Teaspoon      Chilli powder
 1      Teaspoon     Garam masala
 2      Tablespoon      Butter
 1      Teaspoon      Salt
 1      Teaspoon      Lemon juice
 1      Tablespoon      Soy sauce
 150      ml      Double cream
 100      ml      Water
 1            Onion finely chopped
 1            Tomato finely chopped

Sri Lankan Style Amba Maluwa (Mango Curry)

INGREDIENTS:
1 medium ripped mango
2 teaspoons minced garlic
2 teaspoons minced ginger
1 onion (sliced)
salt – to taste
1 teaspoon chilli powder
½ teaspoon turmeric
2 teaspoons Sri Lankan roasted curry powder
6 curry leaves
1 x 2.5cm cinnamon stick
2 cups coconut milk
3 tablespoons vegetable oil
4 tablespoons sugar

Sweet & Sour Prawns

Sweet & Sour Prawns is a Chinese dish which is all my family members & friends loves a lot. Like in other countries, Chinese food is very famous in Sri Lanka too. I have tried this recipe by my self, and it came really realy nice & tasty.
This is a very simple recipe, and very easy to make. Try it by your self, I´m sure you´ll love this.
If you don´t like prawns, try it with Chicken or meat.....
INGREDIENTS:
16 – 20 washed tiger prawns
Oil to deep fry the prawns

For Boiling Prawns:
½ of a lime
½ teaspoon chili powder
¼ teaspoon turmeric
¼ teaspoon salt
1 cup water

For The Batter:
2 cups all purpose flour
1½ - 2 cups water
Pinch of turmeric & salt

For The Sweet & Sour Sauce:
3 tablespoons garlic – finely chopped
2 tablespoons ginger – finely chopped
(I mixed up amounts of garlic & ginger in the video.)
½ of an onion – cut into chunks
5 – 6 pineapple rings – cut into squares
5 – 6 pepperoncini (pepperoni)
1 cup ketchup
2½ tablespoons vinegar
2 tablespoons sweet chili sauce (optional)
4 tablespoons sugar
1¼ cups water
2 tablespoons corn flour
2 – 3 tablespoons oil
