Old style Watalappan - Sri Lankan Dessert

Ingredients :  
 
1 teaspoonful grated nutmeg
150g (5 oz) creamed coconut
225g (8 oz) jaggery
5 eggs (size 4)

Method :  
1. Place jaggery in a pan with 50ml (2 fl oz) water.

2. Bring to the boil, and simmer until the jaggery has dissolved.

3. Dissolve the creamed coconut in 50 ml (2 fl oz ) of hot water and allow to cool.

4. Beat the eggs and strain into a 1¼ litre (2 pint) bowl.

5. Mix the jaggery and milk into the beaten eggs.

Caramel Pudding Sri Lankan Recipes


Ingredients : 

1 can condensed milk
1 can water 1 tspn vanilla
8 eggs 1 cup sugar

Method : 

Banana Fritters














Ingredients:

Enough oil for deep frying
100g self-raising flour
1 tbsp baking soda
2 eggs
2 drops of banana essence
splash of iced sparkling water (or you can use soda Water)
2 very ripe bananas, sliced on the diagonal

For the sauce:
100g sugar
100ml double cream
50g butter
1 table spoon of vanilla
50g roasted Cashew nuts, crushed (optional)

55g of butter/margarine, at room temperature
2 tbsp boiling water

Ingredients   
3 bananas
1/4 c sugar
1/2 tbsp butter
1/2 tsp vanilla
2 squares peanut brittle (Peni kadju) optional
Vanilla ice cream

1 ½ cups semolina
1 cup dates (small pieces)

1 cup raisins

1 peeled lime skin ((small pieces)
4 tablespoons ginger (small pieces)
8 cardamom pods
½ cup wheat flour
1 teaspoon sweet cumin seeds (= Fennel seeds)
1 tablespoon vanilla extract
1 teaspoon rose essence
Salt to taste
Water

Watalappam (Kind of a Pudding With Coconut Milk, Eggs & Jaggery) - Sri Lankan Dessert


 
Watalappam is a very famous dessert in Sri Lanka with everyone. But In Ramadan festival Watalappam is an essential dessert on the table in Sri Lankan Muslim houses. I have heard my mother always say, "Muslim people can make Watalappam very tasty". But I´m sure you also will make the Watalappam very tasty no matter which nationality you are 

INGREDIENTS:
500g jaggery – finely scrapped
4 cups thick coconut milk
8 eggs
8 cardamom pods
1 teaspoon fennel
1 x 2.5cm cinnamon stick
½ cup cashew nuts
½ cup raisins
2 tablespoons butter
1 tablespoon vanilla extract (optional)
