Icing Date cake


Ingredients   
500 g chopped dates
1 cup water
250 g flour
4 eggs
200 g butter
250 g sugar
1 teaspoon baking soda
2 teaspoon baking powder
1 teaspoon vanilla essence
2 teaspoon rose essence
2 teaspoon almond essence
1 teaspoon of all spice
100 g cashew nut
Icing mixture
100 g icing sugar
50 g butter
1/2 teaspoon rose essence
1 teaspoon almond essence


Method :
Mix baking soda with 1 cup of water and add Chopped dates and add 1 tsp rose and 1 tsp almond essence.

Keep for 12 hours. Sieve flour three times with baking powder and all spice.

Cream together the butter & sugar until light and fluffy. Beat in the eggs in a separate mixing bowl. Add flour and egg cream time to time to butter & sugar mixture. Add chopped cashew nut and date mixture also, Add 1 tsp vanilla, almond and rose essences mix well. 

Bake in preheated oven at 200 C for first 20 minutes then 160 C another 30 to 40 minutes. keep it cool down for 2 hrs. Then mix butter, icing sugar, rose and almond essence. Spread the icing mixture over the top of the date cake.
